I saw this on Instructables and thought it might have some applications here as well:
Magnetic action figures
Basically, glue small magnets into the ends of separate parts and they serve as a point of articulation.
I was also thinking the same technique would work for something like allowing different ordinance loads on aircraft or kitbashing on the fly. And there would be an added advantage that the magnets on a paper model could be completely out of sight.
