Software that can handle smooth curves?

I know that Pepakura can only handle polygons when unfolding.
But I've seen models that have smooth curves and was wondering if those can only be hand-designed?
Example is the Enterprise TOS edition. Almost every part of that model is smooth curves, from the cylindrical body and nacelles to the multiple curved rings that make up the saucer section.
